Instructions
Step 1
Prep: Cut extra-firm tofu into 0.5-1cm cubes. Zest the lemon.
Step 2
Sauce: Blend silken tofu, cornflour, and milk until smooth.
Step 3
Scramble: Melt butter in a frying pan. Add cubed tofu, cook for 3 mins. Lower heat, pour in silken tofu blend, then add nutritional yeast, turmeric, black salt, lemon zest, salt & pepper. Stir for 1-2 mins until glossy and thick, mashing gently with a fork. Taste and season.
Step 4
Assemble: Pile the tofu filling onto bread, sandwich together, slice and serve.
