Ingredients

500 gramspasta
3 Tbspolive oil
3onions
small, diced
5 clovesgarlic
minced
1 Tbspsalt
1 dashblack pepper
1000 gramsground chicken
1360 gramspassata
strained tomatoes
1 Tbspdried thyme
1 Tbspdried rosemary
1 Tbspchili sauce
optional
3red bell peppers
small, diced
1.5zucchini
small, diced
2 Tbspnduja
250 gramsshredded parmesan cheese
Instructions
Step 1
Step 1 Cook the pasta according to package directions, then drain and set aside.
Step 2
Step 2 Heat olive oil in a large skillet over medium heat. Add diced onions and cook for 10 minutes, stirring occasionally, until softened and lightly browned.
Step 3
Step 3 Stir in garlic and cook for 1 minute until fragrant.
Step 4
Step 4 Season ground chicken with salt and pepper, then add to the skillet. Cook for 5–7 minutes, breaking up the meat, until no longer pink. Set aside.

Step 5 In a large pot, heat passata over medium heat. Add thyme, rosemary, chili sauce if using, and tomato ’nduja spread. Simmer 2–3 minutes.
Step 6
Step 6 Add diced bell peppers and zucchini to the sauce and cook for 10 minutes until vegetables are crisp-tender.
Step 7
Step 7 Add cooked chicken to the sauce and stir well. Simmer a few minutes to rewarm and blend flavors.
Step 8
Step 8 Serve sauce over hot pasta and top with parmesan cheese.
