Instructions
Step 1
Pat steaks dry, season generously with salt & pepper.
Step 2
Heat olive oil in a cast iron skillet until smoking hot.
Step 3
Sear steaks 2–3 min per side for medium rare.
Step 4
Add butter, garlic, and thyme. Tilt pan, spoon butter over steaks for 1–2 min
Step 5
Rest steaks 5 min before slicing.
