Step 1
1. Heat oil in a pan and fry tofu cubes until golden brown. Set aside.

2. In the same pan, sauté onions until translucent. Add garlic and ginger, cooking until fragrant.

3. Stir in tomato purée and tomato paste. Cook for 5-7 minutes until thickened.

4. Add garam masala, turmeric, chilli powder, cumin, and salt. Cook for another 2 minutes.

5. Pour in coconut milk and maple syrup, stirring until smooth. Let it simmer for 5 minutes.
Step 6
6. Add the fried tofu cubes, coating them well in the sauce. Simmer for 2-3 minutes.
Step 7
7. Garnish with fresh coriander and serve hot with basmati rice and naan.
