For the Gravy

2 cupsbeef broth

2 TBeef drippings
from ground beef

3 Tcornstarch

1 Tcoconut aminos

½ tsppaprika

2 lbsground beef
80/20 for drippings

1 ½ tspsalt

½ tspblack pepper

1 Tcoconut aminos

1 tpaprika

1 tground mustard

Instructions
Step 1
In a large skillet, brown 2 lbs ground beef over medium heat.
Step 2
Season with salt, pepper, coconut aminos, smoked paprika, and ground mustard.
Step 3
Once cooked, remove beef from skillet and reserve 2–3 Tbsp beef drippings for the gravy.
Step 4
In the same skillet, add the beef drippings.
Step 5
Whisk 2 Tbsp cornstarch into ¼ cup cold beef broth to make a slurry.
Step 6
Add the remaining 1¾ cups beef broth to the skillet and bring to a simmer.
Step 7
Slowly whisk in the slurry and stir until thickened.
Step 8
Season with coconut aminos, smoked paprika, salt, and pepper.
Step 9
Lightly grease the crock pot insert.
Step 10
Spread 3 cups cooked brown rice evenly on the bottom.
Step 11
Layer the cooked ground beef on top of the rice.
Step 12
Pour the gravy evenly over the beef.
Step 13
Fry 6–8 eggs in a skillet to your preferred doneness in coconut oil.
