Ingredients

500gminced lamb

2onions
medium, finely chopped

2tomatoes
medium, chopped or pureed

2 Tbspginger-garlic paste

6dried apricots
jardaloo, soaked in warm water for 30 mins

1 tspturmeric powder

1 ½ tspred chilli powder
adjust to taste

1 ½ tspground coriander

1 tspground cumin

1 tspgaram masala

1 tspsugar
or jaggery, optional, to balance tang

salt
to taste

3 Tbspoil

fresh coriander leaves
for garnish
Instructions
Step 1
Heat oil in a heavy pan. Add onions and fry until golden brown.
Step 2
Add ginger–garlic paste, fry for a minute.
Step 3
Stir in turmeric, chilli, coriander, cumin, and cook briefly.
Step 4
Add Lamb mince sear until lightly browned.
Step 5
Stir in tomatoes and a little water. Cover and cook on low until the meat is tender (pressure cooker or Instant Pot speeds this up).
Step 6
When meat is nearly done, add soaked apricots (with soaking water if slightly tangy). Simmer gently until the gravy thickens and the apricots soften.
Step 7
Season with salt, garam masala, and (if needed) a pinch of sugar/jaggery.
Step 8
Garnish with coriander leaves.
