Spinach, Chickpea & Feta Parcel

Delicious spinach, chickpea, and feta parcels wrapped in filo pastry, served with a refreshing cucumber salad and a touch of honey-drizzled yoghurt.

Instructions

Step 1
Preheat oven to 220°C/425°F.
Step 2
Drain chickpeas and add to a food processor with feta, spinach, lemon zest, and paprika. Blitz until combined.
Step 3
Fold a sheet of filo pastry in half, place 1/4 of mixture in the center, and form a parcel. Repeat to make 4 parcels.
Step 4
Heat olive oil in ovenproof frying pan over medium heat. Fry parcels lightly, then bake until golden and crisp.
Step 5
Use a fork to scratch the cucumber skin, slice it, and add to a bowl. Slice the onion and add to the bowl.
Step 6
Season with salt, add lemon juice, chop and add coriander and mint. Mix well.
Step 7
In a pan, toast almonds and olives with olive oil. Slice tomatoes and lettuce, and arrange on a platter.
Step 8
Add cucumber and onion, drizzle with extra virgin olive oil, and add contents from the pan.
Step 9
Serve parcels with yoghurt, honey, and salad.
