Instructions
Step 1
Heat garlic-infused oil in a nonstick skillet over medium heat.
Step 2
Season cod with salt and sear 4-5 minutes per side until golden and flaky.

While cod cooks, combine tomatoes, olives, and chives in a bowl.

Remove cod from heat and spoon the tomato-olive mixture over each fillet.
