With this air fryer mini quiche recipe, you can enjoy all the goodness of quiche without the need for a traditional pie crust. Instructions

Step 1
I combined creamy ricotta cheese with finely chopped spinach and sliced spring onions. To bind everything together, I cracked in two eggs and mixed thoroughly until all the ingredients were evenly distributed. This creates a rich, savoury mixture that’s full of flavour and naturally low in carbs.
Step 2
Next, I spooned about a tablespoon of the quiche mixture into each section of a silicone muffin tray. These silicone moulds are ideal for the air fryer as they withstand the heat well and make it easy to remove the quiches once they’re cooked.
Step 3
I carefully placed the silicone moulds into the air fryer drawer and cooked the mini quiches at 180°C for around 10 minutes. It’s always a good idea to check them halfway through cooking, as air fryer models can vary and some may cook faster than others. You’re aiming for a lightly golden top and a set centre.
Step 4
Then once cooked, I served these mini crustless quiches with a simple green salad, lightly drizzled with your favourite dressing.
