Instructions
Step 1
On medium high heat, pan sear corn and toss with seasonings, set aside to cool
Step 2
Mix cooled corn mixture with salad ingredients
Step 3
Combine ingredients of the dressing and then mix with salad ingredients
Step 4
Top with avocado, cojita and pumpkin seeds
