2bell peppers
large, any color

1 cupchickpeas
cooked, or canned, rinsed & drained

½ cupground turkey
cooked

1zucchini
small, finely diced

1onion
small, finely chopped

1garlic clove
minced

2 Tbspextra-virgin olive oil

¼ cupcrumbled feta cheese
optional

2 Tbspfresh parsley
chopped

1 tspdried oregano

½ tsppaprika

salt
to taste

black pepper
to taste

0.5juice of lemon
Instructions
Step 1
Preheat oven to 375°F (190°C).
Step 2
Slice the tops off the bell peppers and remove seeds. Place them upright in a small baking dish.
Step 3
Heat 1 Tbsp olive oil in a pan. Sauté onion, garlic, and zucchini until softened (about 5 minutes).
Step 4
Add chickpeas, cooked turkey, oregano, paprika, salt, and pepper. Cook 2–3 minutes, then remove from heat.
Step 5
Stir in feta, parsley, and lemon juice. Taste and adjust seasoning.
Step 6
Fill each bell pepper with the mixture. Drizzle with the remaining olive oil.
Step 7
Cover loosely with foil and bake 25 minutes. Remove foil and bake another 10–15 minutes until peppers are tender.
