Ingredients

3 Tbspoil
recommend using the oil from the jar of sundried tomatoes

1red onion
finely chopped

100gsundried tomatoes
finely chopped

2garlic cloves
grated

1 heaped tsppaprika

2 heaped tspdried oregano

50gtomato puree

600gboneless chicken thighs
diced

300gorzo

300gfull fat cottage cheese

500mlveg stock
plus extra if needed

salt
to taste

pepper
to taste

50gParmesan cheese
grated

fresh basil
chopped
Instructions
Step 1
1.) To a frying pan, add the oil and place over a medium heat. After a minute, add the chopped red onion and sauté for 2-3 minutes until softened, making sure to continuously stir.
Step 2
2.) Add the seasonings, tomato puree and grated garlic, and sundried tomatoes, and stir through for a minute before adding the diced chicken to the pan and cook for 5 minutes or until the chicken has turned white.
Step 3
3.) Add the orzo, cottage cheese, stock, and mix until combined. Lower the heat and cover the saucepan with a lid. Cook for 12-15 minutes, stirring regularly.
Step 4
4.) Once the liquid has reduced, remove the lid and stir through the grated Parmesan cheese and fresh basil. Cook for a further minute before serving.
