Instructions
Step 1
Heat the rice – In a skillet, melt butter or oil over medium heat. Add cooked rice, season with salt and pepper, and stir until warmed through.
Step 2
Add cheese – Sprinkle shredded cheese over the rice, stir, and let it melt in to make it cheesy and a little sticky.
Step 3
Cook the eggs – In a separate pan (or same one if you push rice aside), cook your eggs: • Jammy: soft-boil for 6½–7 minutes, peel, and slice. • Fried: sunny-side or over-easy so the yolk runs. • Scrambled: soft and fluffy.
Step 4
Assemble the bowl – Add cheesy rice as the base, top with eggs, then scoop guacamole over the top.
Step 5
Optional extras – Drizzle with hot sauce, salsa, or sprinkle fresh herbs.
