Instructions
Step 1
Add onion, garlic, carrot, celery, and Parmesan rind to pot. Pour in broth and season with tumeric, salt, chicken bouillon, and bay leaf.
Step 2
Bring to boil and simmer 30-40 min.
Step 3
Remove bay leaf and Parmesan rind. Blend vegetables until smooth and reincorporate
Step 4
Add lemon juice
Step 5
In separate pot, boil pastina in salted water
Step 6
Strain pastina and add butter, egg, and Parmesan
Step 7
Serve pastina in a bowl and top with broth. Garnish with Parmesan, black pepper, and olive oil
