Step 1
In a frying pan over medium heat, add the olive oil and spring onion. Sauté for 3-4 minutes, until golden.
Step 2
Next, add the beef mince and break it up with a spatula. Leave to brown for 5 minutes, stirring occasionally.
Step 3
Add the garlic, ginger, carrot, red cabbage, bok choy and tamari and leave to cook for another 10 minutes.
Step 4
In the meantime, cook the brown rice vermicelli according to packet instructions.
Step 5
Stir the noodles through the veggies and transfer to a bowl to serve.
