Step 1
Place chicken breast with salt, pepper, and garlic powder in pressure cooker. Cook for 40 min. While chicken is cooking, in a large pot, sautee carrots, onion and celery until soft, then add garlic for 1 minute. Add in 2 cans Rotel, cream cheese and chicken broth, and taco seasoning. Bring to simmer to melt cheese. Remove chicken from cooker and shred, add to soup pot and bring all to a simmer. Lower heat and add heavy cream. Simmer a few minutes to meld flavors and serve!
