Dice chicken thighs

Cook diced chicken thighs in the pot with cooking oil

Remove chicken thighs from the pot

Add sliced leeks to the pot and cook until beginning to soften (about 3 minutes)

Add tomato paste to the pot and fry for about 1 minute

Add chopped potato and carrots, then 6 cups stock and dried herbs and stir

simmer with the lid on for about 10-15 minutes (depends on your dice)
Step 8
adjust salt and pepper to taste
