Red lentils and rice (Kitchuri)

My mum would make this #easy #rice with #red #lentils dish called #kitchuri whenever it was a rainy day. This is a filling recipe as the red lentils is has lots of protein. This is also a perfect recipe for vegetarians. I love eating this rice with fried eggplant, eggs, and a tomato salad.

Instructions

Step 1
If you have time, soak the rice and lentils for around 20 mins. But if you don’t have time you can skip this step.

Put basmati rice and red lentils in the pot, add water and wash really well 2-4x
Step 3
Put pot on stove on medium heat and add water, sliced onions, salt, turmeric, garlic and ginger paste and a couple of bay leaves
Step 4
Give it a good stir and taste the water to make sure it’s the seasoning is right for you
Step 5
Wait for food to come to rolling boil once it comes to rolling boil stir(this should be more of a flipping motion as to not break up the rice and make it mushy) it again and then turn the temperature down to the lowest possible setting
Step 6
*if you can’t find the Indian bayleaf don’t stress, just leave it out
Step 7
*to make this recipe vegan, replace ghee with a non-dairy butter
