Chicken Biryani-Inspired Fried Rice

Instructions
Step 1
Cook 1 cup basmati rice in 1.5 cups water until fluffy; set aside.
Step 2
Shred 2 cups leftover roast chicken.
Step 3
In a large pan, sauté 1 chopped onion, 2 minced garlic cloves, and 1-inch grated ginger in oil until golden.
Step 4
Add 2 tsp each of your spices, 1 tbsp tomato purée, and a splash of soy sauce. Stir in the chicken to warm through.
Step 5
Mix in the cooked rice, ½ cup coconut milk for creaminess, and 1 tsp honey for balance. Add lemon juice, salt and pepper to flavour.
Step 6
Fry for 5-7 mins until crispy edges form.
Step 7
Garnish with chopped cilantro if available.
