Ingredients
2 servings
2 x 6 ozboneless sirloin steaks
olive oil spray
salt
black pepper
1 tspgarlic powder
Lemon wedge
for serving
2russet potatoes
medium
¼ cupreduced-fat shredded cheddar cheese
4 Tbspfat-free greek yogurt
1 sliceturkey bacon
cooked and crumbled
2green onions
sliced
smoked paprika
1 bunchasparagus
ends trimmed
1 tspolive oil
2cloves garlic
minced
Instructions
Step 1
Preheat oven to 400°F (200°C). Scrub potatoes, prick with a fork, and bake for 45-50 minutes until fork-tender.
Step 2
Toss asparagus with 1 tsp olive oil, garlic, salt, and pepper. Spread on a baking sheet and roast for 12-15 minutes at 400°F.
Step 3
Pat sirloins dry and season both sides with salt, pepper, and garlic powder. Lightly spray skillet or grill pan with olive oil and heat over medium-high. Cook steaks 3-4 minutes per side for medium-rare. Rest 5 minutes; serve with lemon wedge.
Step 4
Slice potatoes open and fluff with a fork. Top each with 2 tbsp Greek yogurt, 2 tbsp reduced-fat cheddar, half the crumbled turkey bacon, green onions, salt, pepper, and a pinch of smoked paprika.
Step 5
Plate one steak with a loaded baked potato and generous serving of roasted asparagus. Squeeze lemon over steak and asparagus.
