Instructions
Step 1
Heat olive oil over medium high heat. Add onion and saute 4 minutes. Add garlic and saute 30 seconds longer
Step 2
Add bone broth, green chillis and spices. Bring mixture to boil then reduce to medium-low and simmer for 15 mins
Step 3
Drain and rinse beans and mash 1 cup of beans until it forms a paste. Add cottage cheese to soup along with corn, whole beans, and pureed beans and stir well. Simmer 5-10 mins longer
Step 4
Stir in chicken, lime juice.
Step 5
Serve with cheese, avocado and chips
