Ingredients

1cucumber
large Armenian, 12-15 inches, thinly sliced into half-moons or rounds
0.5red onion
medium, very thinly sliced, optional
⅓ cupfresh parsley
chopped
3 tablespoonsfresh chives
snipped small
1 ½ cupsfat free mozzarella
shredded
4 tablespoonsfresh lemon juice
1 teaspoonlemon zest
1 tablespoonallulose
sugar free honey replacement, or monk fruit, optional
1 teaspoonkosher salt
freshly ground black pepper
to taste
⅓ cupmct oil
Instructions
Step 1
Slice cucumber: No need to peel unless you prefer. Cut into thin slices or half-moons.
Step 2
Step 2 Optional salting: Toss cucumber slices with ½ teaspoon salt in a colander, let sit 15–20 minutes, then pat dry (keeps them extra crisp).
Step 3
Step 3 Make dressing: Whisk lemon juice, zest, MCT OIL, my normal allulose, salt, and pepper in a bowl or jar. Adjust to taste.
Step 4
Step 4 Assemble: In a large bowl, combine cucumber, onion (if using), parsley, and chives. Toss with dressing.
Step 5
Step 5 Add mozzarella right before serving: Fold in gently so they stay creamy.
Step 6
Step 6 Serve chilled or at room temp: About ¾ cup per person.
