Step 1
Rehydrate the chiles: Place the dried guajillo and chiles de árbol in a pot with water and bring to a boil. Simmer for about 10-15 minutes until they are soft.
Reserve chile water: Remove the chiles from the pot and reserve ½ cup of the cooking water.
Blend the ingredients: Combine the rehydrated chiles, reserved chile water, peeled garlic, white vinegar, salt, ground cumin, and oregano in a blender.
Blend until smooth: Blend the mixture until it reaches a smooth consistency. You can add more reserved chile water to reach your desired thickness.
Adjust seasoning: Taste the sauce and adjust the salt or other seasonings as needed.
