Ingredients

2onions
diced
1green pepper
diced
3garlic
finely chopped
1 tspground cumin
2 tspground coriander
1cinnamon stick
or use 1/2 tsp ground
2 tspsweet paprika
1 Tbsptomato puree
1 tspdried oregano
chilli flakes
Any ancho are lovely here & widely available
0.5tin coconut milk
600gblack beans
I use the juices, esp if the jarred sort
Sweet potatoes
baked until squishy & soft with a bit of olive oil & salt
Fresh chilli
sliced to serve, or use hot sauce
Instructions
Step 1
Cook off onions & peppers in olive oil until v. soft over moderate heat.
Step 2
Add garlic & spices, and splash more oil till all is sizzling for a minute more, add tomato puree & mix well.
Step 3
Add black beans & coconut milk, season well with salt & plenty of black pepper.
Lid on, reduce the heat to moderate / low & cook for around 30 mins, until thick & rich & creamy
