Instructions

Step 1
Cook off onions & peppers in olive oil until v. soft over moderate heat.
Step 2
Add garlic & spices, and splash more oil till all is sizzling for a minute more, add tomato puree & mix well.
Step 3
Add black beans & coconut milk, season well with salt & plenty of black pepper. Lid on, reduce the heat to moderate / low & cook for around 30 mins, until thick & rich & creamy
