Step 1
Saute onion until translucent, meanwhile, mix beans, chilies, Rotel, cheese and spices in a large bowl.
Step 2
Add bean mixture to pan and cook until thoroughly heated and much of the liquid has boiled off.
Step 3
Spray one side of each tortilla with cooking oil. Divide the bean mixture and place in tortillas on the unoiled side. Add extra cheese, as desired.
Step 4
Roll tortillas burrito-style and place, seam side down, on a wire baking rack on a cookie sheet. Bake for 5 minutes. Turn over, bake for 5 more.
Step 5
If extra crispiness is desired, broil for a minute or two on each side watching VERY CLOSELY as tortillas can burn quickly.
Step 6
Serve with salsa and sour cream, if desired.
