Fritters
¼ cupplain flour
1egg
1zucchini
medium, grated
0.5leek
thinly sliced
¼ cupfrozen peas
1 tspgarlic
minced
1 Tbspparsley
chopped
1 Tbspmint
chopped
½ tspcumin
salt
to season
black pepper
Peanut butter yoghurt sauce

Yoghurt sauce
Step 1
Combine ingredients in a small bowl and mix until smooth.
Fritters
Step 2
Mix together zucchini, leek, peas, garlic, egg, flour, parsley, mint, and cumin. Mix to combine. Where required add more flour if mixture is too runny, or some water if too dry.
Step 3
Heat oil in a frying pan over high heat. Spoon ¼ cup of mixture for each fritter into the pan, cooking for 2 minutes on each side (cooking in batches if required). Set aside.
Halloumi
Step 4
In the same pan, cook halloumi slices for 1 minute on each side.
To serve
Step 5
Stack fritters and halloumi in alternating layers between two plates. Dollop over the yoghurt sauce. Sprinkle with some mint and a drizzle of sriracha (if desired).
