Instructions
Step 1
Preheat your oven to 190°C / 375°F and lightly coat a 9×9 inch baking dish with nonstick cooking spray or a dash of olive oil.
Step 2
In a bowl or big jug whisk together the eggs, garlic powder, salt, and pepper until fully combined. Then, mix in the cheeses and spinach.
Step 3
Line the baking dish with any other vegetables you would like to use. I quite like tinned asparagus. If using fresh or frozen veggies ensure the vegetables are cooked or steamed as the bake won’t be in the oven long enough to cook dense veggies like carrots. I steam in the microwave as yes I’m lazy! Read here how to steam vegetables in the microwave. It only takes a second.
Step 4
Pour the egg mixture onto the prepared dish and bake for 30-35 minutes, or until the center is set. I like mine extra brown so I leave it in a bit longer often.
