Instructions
Step 1
Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Add the broccoli florets to the pot during the last 2-3 minutes of cooking. Drain and set aside.
Step 2
In a large skillet, heat the olive oil over medium heat. Add the sliced leek and minced garlic, and sautΓ© for about 3-4 minutes until softened.
Step 3
Stir in the chopped sundried tomatoes, seasoning with salt and black pepper, and cook for another 2 minutes, allowing the flavours to meld.
Step 4
Add the cooked pasta and broccoli to the skillet, along with the basil pesto. Toss to combine until everything is evenly coated.
Step 5
Remove from heat and gently fold in the burrata cheese, breaking it into pieces as you mix.
Step 6
Sprinkle with grated parmesan, and chili oil to taste.
Step 7
Serve immediately.
