Ingredients
2 servings
2 Tbspextra virgin olive oil
onion
medium, finely diced
celery ribs
diced small
carrot
large, diced small
garlic cloves
minced
1 ¼ tspmild chilli powder
1 tspsmoked paprika
1 ¼ tspground coriander
1 tspground cumin
1 tspdried oregano
2bay leaves
½ tspsea salt
0.5black pepper
65gtomato puree
400gtin chopped tomatoes
250mlVegan stock
1 tspsoy sauce
1 tspcider vinegar
400gtin black beans
400gtins green lentils
Instructions
Step 1
Heat the olive oil. Add the onions, celery and carrot and sauté for 3 minutes on a medium heat until slightly soft.
Step 2
Add the garlic, spices, bay leaves, salt and pepper and cook for 1 more minutes.
Step 3
Add the tomato puree, chopped tomatoes, veg stock soy sauce, apple cider vinegar, beans and lentils. Summer for about 15 minutes on a low to medium heat until it starts to thicken.
Step 4
Adjust the seasoning and spices to taste and serve with toppings (coriander, avocado) and serve with rice.
