Chicken & Spinach (saag)

Simple and easy indian dish to make. You can substitute the spinach with kale, or for a pop of colour - add in diced paneer! This dish is best served with roti or tortilla.

Instructions

Step 1
In a pan add the oil, fenugreek seeds, cumin, and onions to saute with the lid on.
Step 2
Add in the marinated chicken, and stir well before closing the lid to cook for 2 mins. When the water has released from the chicken, add in the tomatoes.
Step 3
Add in the spinach either a bunch at a time or altogether - depending on the height of your pot. Cover the lid to help the moisture to shrink the spinach and stirring occasionally until the water has reduced. Best served with roti or tortilla.
