¼ cupbrown sugar
1 Tbspsoy sauce
1 Tbspworcestershire sauce
2 tspgarlic powder
1 tspblack pepper
1 tspall spice
2 Tbspvegetable oil
1yellow onion

4green onions
chopped
1 Tbspminced garlic
2carrots
chopped
1scotch bonnet
cleaned and chopped
1 cupbeef broth
1 Tbspketchup
1 tspthyme
2 Tbspwater
1 Tbspcornstarch
16 ozbutter beans
Instructions
Step 1
Rinse oxtails with water and vinegar and pat dry...cover oxtails with brown sugar, soy sauce, worsteshire sauce, black pepper, garlic powder, all spice, and rub in...set pressure cooker on high saute and once hot add vegetable oil...next add the bigger oxtails on the bottom, flat side down about 1/4 inch apart...brown on each side, remove oxtails and place in a bowl...deglaze your pressure cooker by adding about 2 tbsp of beef broth to the insert...remove brown bits from the bottom then add onions, carrots, garlic, and scotch bonnet...stir and sauté for about 5 minutes or until onions are soft...add the thyme, oxtails, and marinade, remaining beef broth, and ketchup into insert...press cancel on your instant pot and cook on high pressure for 45 minutes, allow the pressure cooker to release...remove oxtails and vegetables, leave liquid behind...turn on saute once liquid starts to simmer, create cornstarch slurry...stir into simmering liquid, add butter beans simmer for 5 minutes...add everything back to the pot and let simmer for 10 minutes...serve with rice...enjoy...
