1 lbitalian sausage
casings removed
0.5 lbrigatoni
about a
1 cupsmarinara sauce
jarred, or tomato
¼ cupheavy cream
or substitute milk + butter
¼ cupsun-dried tomatoes
chopped
2cloves garlic
minced
½ tspItalian seasoning
or oregano + basil + thyme
¼ tspcrushed red pepper flakes
optional
salt
to taste
black pepper

Grated Parmesan
for topping
Olive oil

Fresh spinach

Instructions
Step 1
Start the pasta water early by boiling a large pot of salted water.
Step 2
Cook rigatoni until al dente (about 10-11 minutes). Reserve 0.5 cup pasta water, then drain.
Step 3
In a large skillet over medium heat, cook the sausage until browned and cooked through.
Step 4
If the sausage is fatty, spoon off grease, but leave 1-2 tsp for flavor.
Step 5
Add minced garlic, sun-dried tomatoes, and Italian seasoning. Sauté for 1-2 minutes until fragrant.
Step 6
Pour in jarred sauce, stir, and let simmer on low heat for 5 minutes.
Step 7
Stir in heavy cream and simmer for another 2-3 minutes until blended and thickened.
Step 8
Taste and adjust salt, pepper, and red pepper flakes.
Step 9
Add the drained pasta to the skillet and toss to coat in sauce.
Step 10
If sauce is too thick, add reserved pasta water.
Step 11
Stir in spinach (if using) until wilted.
Step 12
Plate, sprinkle with Parmesan, and drizzle olive oil if desired.
