Step 1
Prep chop all your veggies and measure out your spices.
Step 2
Dutch Oven cooking: in a Dutch oven heat the oil and add your onions to cook then first until fragrant. Add your peppers and sweet potatoes to the mix and cook for 2 minutes before adding the garlic. Drain the beans of any liquid and add them to the pot with the diced tomatoes (with juice) along with the spices. Mix everything together before adding the broth. Cook for 20 minutes on medium heat and serve once cooled.
Step 3
Slow cooker: combine everything in the Slow cooker. Mix well and set the cooker to high to cook for 2 hours. Serve once cooled.
