Instructions
Step 1
Heat oil or butter in a saucepan. Add onion and carrots with a pinch of salt. Cook gently for 10 minutes, stirring, until softened (don’t rush this).
Step 2
Add garlic and cook for 30 seconds. Add the tinned tomatoes.
Step 3
Pour in stock, add herbs if using, bring to a simmer. Cook for 20 minutes until carrots are very soft.
Step 4
Blend until smooth.
Step 5
Season to taste — you’ll usually find no sugar needed because of the carrots.
