Instructions
Step 1
Sprinkle chicken with 1/4 tsp Salt. Heat 1 tsp oil in large skillet over medium high heat. Cook chicken. Set chicken aside.
Step 2
Heat 2 tsp oil in skillet over medium high heat. Add onion and bell pepper; saute 5 minutes. Add 1/4 tsp Salt, ginger, curry, coriander, and garlic; sauté 30 sec. Combine cornstarch and broth and add to pan. Remove from heat. Stir in mango.
Step 3
Serve with rice. Sprinkle green onion.
