This recipe is the version my mother has made my entire childhood. Ultimate comfort food. I take and split it between two casserole dishes and freeze one for later if not making it for a big get together. It freezes well and you can cook from frozen, just bake longer. I think it was 60 minutes last time I baked a frozen one.

Instructions
Step 1
Brown garlic and onion in oil. (Start water to boil for noodles)
Step 2
Add hamburger to garlic onion mix cook till brown. (Water should be boiling at this point and add noodles with salt to water and turn down to medium high heat)
Step 3
Add sauce ingredients to the meat: salt, pepper, rosemary, tomato paste, and water. Water should be at a boil, add lasagna noodles to water.
Step 4
Let sauce simmer for 30 minutes uncovered.
Step 5
Carefully drain al dente noodles and keep in cool water.
Step 6
Add a thin layer of sauce to the bottom of a large baking dish (roasting pan is best).
Step 7
Layer the lasagna in this order on the sauce in the pan:
1. Noodles
2. Sauce
3. Cottage cheese 4. Mozzarella cheese 5. Repeat until noodles are all used. Option: replace cottage cheese with ricotta cheese on one layer. (Tip: drop dollops over the layer for easier spreading.)
6. Top with layer of mozzarella cheese, ensuring that no noodles are exposed to prevent drying out
Step 8
Bake uncovered at 350 degrees Fahrenheit for 30 minutes (longer if the cheese isn't melted and starting to brown around the edges)
Step 9
Let rest for 10 minutes to thicken before serving.
