TUNACADO SANDWICH

Ingredients
2 servings
15 ozcanned tuna
unsalted, in water
2 Tbspred onion
diced
1 Tbspdill
chopped
1.5 TBSPmayo
1 Tbspdijon mustard
2 tspcapers
chopped
0.5juice of lemon
salt
pepper
1 cupfresh basil
½ cuppine nuts
1clove of garlic
1 cupparmesan
grated, vegan or regular
½ cupolive oil
¼ tspsalt
1tomato
0.5avocado
2slices of sourdough
or bread of choice
Instructions
Step 1
Drain the tin of tuna. Dice the red onion and chop the dill and capers.
Step 2
To a bowl, add 1 tin of drained tuna, 2 TBSP diced red onion, 1 1/2 TBSP mayo, 1 TBSP dijon mustard, 1 TBSP chopped dill, juice of 1/2 lemon, 2 tsp chopped capers, and a dash of salt and pepper.
Step 3
Mix until thoroughly combined.
Step 4
For the pesto, to a blender add: 1 cup fresh basil, 1/2 cup pine nuts, 1 clove of garlic, 1 cup grated parmesan, 1/2 cup olive oil, and 1/4 tsp salt. Blend for about 30 seconds or until smooth.
Step 5
Slice 1 tomato and 1/2 avocado.
Step 6
Cut 2 slices of sourdough and toast until golden brown using a panini press or a pan.
Step 7
Once the bread is toasted, spread pesto on both slices.
Step 8
To one slice of bread, add half of the tuna mixture, sliced tomatoes (with a dash of salt and pepper), 1/2 sliced avocado, and then top with the other slice of bread.
Step 9
Slice in half and enjoy!
