Fritters
0.3 x 420gcan of corn kernels
drained
1potato
medium, grated
2spring onions
sliced
50gplain flour
1 tsppaprika
cayenne pepper
½ tspbaking powder
2eggs
beaten
4 Tbspwater
salt
to season
black pepper
Avocado cream
Instructions
Avocado cream
Step 1
Add ingredients to a food processor and mix until fully combined. Set aside until serving.
Fritters
Step 2
Mix the ingredients for the fritters in a large bowl until combined.
Step 3
Heat oil in a frying pan. Add spoonfuls of the mixture into the pan, ensuring there is separation between each fritter. Gently spread each one out with the back of a spoon.
Step 4
Cook for 2-3 minutes and then turn and cook for a further 2-3 minutes. Remove and drain on some paper towel. Repeat to cook the next batch of fritters.
To serve
Step 5
Place three fritters on each plate. Dollop with the Avocado cream and place the poached egg on top. Top with some chilli flakes.
