Ingredients

drained, juice reserved
4 tablespoonsunsalted butter
0.5 lbbacon
cut into 1/2-inch pieces
2 bunchesscallions
finely chopped, white + green separated
4garlic cloves
minced
1jalapeño
thinly sliced, optional
2Yukon Gold potatoes
medium, diced small, reduced
2 cupscauliflower florets
chopped small
2celery stalks
diced
¾ teaspoonsea salt
½ teaspoonblack pepper
1 cupfrozen corn
optional still lower carb with reduced potatoes
½ cupheavy cream
instead of 1 cup
½ cupcannellini beans
or great northern, rinsed, fiber boost
Instructions
Step 1
In a skillet, cook bacon until crisp.

Remove bacon and reserve.

Leave 1–2 tablespoons bacon fat in the pan.
