¼ cuplime juice
½ cupsalsa
1garlic clove

12flour tortillas

1 ½ cupsshredded cheddar cheese
or Monterey Jack
2boneless skinless chicken breasts
whole, cut into strips
1onion
medium, cut into thin wedges
0.5sweet red pepper
medium, cut into strips
0.5yellow pepper
medium, cut into strips
0.5green pepper
medium, cut into strips
Instructions
Step 1
In a small bowl, combine lime juice, salsa, garlic, chili powder, and cumin.
Step 2
Add chicken strips to the marinade and stir to coat. Marinate for a few minutes.
Step 3
In a nonstick skillet, cook chicken until no longer pink.
Step 4
Add onions and peppers to the skillet and stir-fry until the peppers are tender.
Step 5
Serve with tortillas and top with shredded cheese.
