Step 1
Season beef with salt and pepper. Sear in a skillet over medium-high heat until browned on all sides.

Transfer beef to crockpot. In a bowl, whisk together maple syrup, Dijon, whole grain mustard, soy sauce, Worcestershire, broth, garlic powder, and onion powder.
Step 3
Pour sauce over the roast and top with thyme sprigs.
Step 4
Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until beef is fork-tender.
Step 5
Remove beef, slice or shred, and spoon sauce over top. Garnish with extra thyme and mustard seeds if desired.
