Instructions
Step 1
Saute veggies except spinach and potatoes until soft then add seasoning and saute till fragrant.
Step 2
Add lentils, sweet potato and broth and cook until everything is tender. (Add more broth or water if needed)
Step 3
Add spinach and coconut milk and cook until soft. Top with juice of lime and serve 😊
