Nando’s Chicken and Rice with Halloumi

Instructions
Step 1
Preheat oven to 190°C/375°F (fan 170°C/325°F) Gas mark 5 and find 4 oven safe meal prep dishes.
Step 2
To each dish, divide the rice, chopped pepper, diced chicken, minced garlic, tomato puree, Nando’s sauce and chicken stock. Stir everything together in each.
Step 3
Bake in the oven for 30-35 minutes until rice has absorbed most of the liquid and chicken is cooked through.
Step 4
Meanwhile place a non-stick frying pan over a medium heat and add the halloumi pieces, fry until golden, then add 5g of chilli jam and stir to coat the halloumi pieces, cook for a further minute until sticky.
Step 5
Top the cooked Nando’s chicken and rice with the halloumi pieces and divide out the remaining chilli jam.
Step 6
Allow to cool fully, before adding the lids and storing in the fridge for up to 3 days to be reheated.
