Ingredients

12 ozpasta
penne, fettuccine, or rigatoni work great
2chicken breasts
large, sliced into bite-size pieces
Salt and black pepper
to taste
1 TbspItalian seasoning
1 tsppaprika
optional, but nice
2 Tbspolive oil
3 clovesgarlic
minced
½ cupsun-dried tomatoes
sliced, oil-packed preferred
1 ½ cupheavy cream
1 cupchicken broth
½ cupParmesan cheese
freshly grated
1 cupsfresh spinach
Red pepper flakes
to taste, optional
Boursin garlic and herb cheese

Instructions
Step 1
Cook the pasta
Step 2
Bring a large pot of salted water to a boil and cook pasta according to package directions. Reserve ½ cup of pasta water, then drain and set aside.

2. Season and cook the chicken
Step 4
Season chicken with salt, pepper, Italian seasoning, and paprika.
Step 5
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes, until golden and cooked through. Remove from the skillet and set aside.

3. Build the sauce
Step 7
In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
Step 8
Stir in sun-dried tomatoes, then pour in chicken broth and heavy cream. Bring to a gentle simmer. Add Boursin cheese and tomato paste. Bringing it to another simmer. Salt and pepper to taste.

4. Make it creamy

Lower heat and stir in Parmesan until melted and smooth. Add spinach and cook just until wilted.

5. Bring it all together

Add the cooked chicken and pasta to the skillet. Toss to coat everything in the sauce, adding reserved pasta water a little at a time if needed to loosen it up.

6. Finish and serve

Taste and adjust seasoning. Sprinkle with red pepper flakes if you like a little heat. Serve warm with extra Parmesan on top.
