Step 1
Take 1/3rd bowl Toor, 1/3rd bowl Moong and 1/3rd bowl Masoor in a cooker and wash them thoroughly and add 1/2 tsp turmeric and 1 tsp salt. Pressure cook it for 5 whistles. While the cooker whistles make 2 tbsp of tamarid paste. To make this soak a small chunck of tamarind in 1 small bowl in hot water. Let is soak for 10 mins. Once the cookers cools down, open it up and blend the cooked dal with help of blender or spatula. And then while the help of strainer mash and filter the tamarind pulp so that you get 2-3 tbsp of tamarind paste.
Step 2
Ensure to cut begetables beforehand. Take a Kadhai and heat 2 tbsp oil, put 1 tsp mustard seeds, 1/2 tsp hing, 2 dried red chillies and crackle them. Then add chopped vegetables (onion, potato, tomato, carrot, drumstick) you can add other vegetables if you like and saute them for 2-3 mins. Add 1/2 tsp turmeric powder, 3/4 tbsp red chilli powder, salt as per taste (remember we added salt in cooked dal too) and 2 tbsp sambhar masala and saute till quickly and cover the kadhai on low flame so that masala and veggies can cook. Once veggies are half done, add the tamarind paste we made, and let it get cooked along with veggies. Then add the dal into it and some hot water to adjust consistency. Let it cook for 5-6 mins and then add 1 tsp sambhar masala and 2 tsp jaggery powder or adjust it as per your liking and then add 1 tbsp of ghee. Let it cook for a while add hot water if sambhar thickens and salt if required. At last add some chopped coriander leaves. Turn off the flame and cover the sambhar and let it rest for few mins and then its ready to serve.
