Instructions

Step 1
Combine flour, sugar, baking powder, salt, and ginger in a bowl.
Step 2
In a separate bowl, combine bananas, milk, egg, and vanilla.
Step 3
Stir the flour mixture into the banana mixture until smooth.
Step 4
Gentlv fold in the mini chocolate chips.
Step 5
Let the batter stand at room temperature for 10-15 minutes.
Step 6
Preheat a nonstick griddle or large nonstick skillet over medium heat.
Step 7
Using a scant 1/4 cup for each pancake, pour the batter onto a pan.
Step 8
Cook just until the tops are covered with bubbles and the edges are browned, 2-3 minutes.
Step 9
Flip and cook until browned, about 2 minutes longer. Serve immediately,
