Ingredients

1 Tbspgroundnut oil
3garlic cloves

20gfresh ginger
finely chopped
1red chilli

1Shallot
thinly sliced
2limes

400mlcoconut milk
350mlChicken Bone Broth
or Vegetable Broth
1 tspground coriander
¼ tspsalt
¼ tspBlack Pepper
freshly ground
4cod fillets
200gJasmine rice
dry
3spring onions
thinly sliced
chilli oil
20gcrispy onions
1 tspblack sesame seeds
4Pak Choi
sliced in half
1 Tbsplight soy sauce
½ Tbspsesame oil
Instructions
Step 1
Bring a large saucepan of water to the boil and cook the rice according to the packet instructions.
Step 2
Heat the groundnut oil in a large, deep lidded pan, sauté the garlic, ginger, chilli and shallot for 3-4 minutes over medium heat until soft and fragrant.
Step 3
Add in the coconut milk and broth, stir to combine and bring to a low simmer.
Step 4
Stir in the coriander, add the lime zest and juice of 1 lime, salt, pepper, and leave to simmer for 10 minutes.
Step 5
Add the cod fillets, spoon some of the coconut-broth over, cover and leave to simmer for 9-10 minutes until the cod is cooked to preference.
