Ingredients

1.5 lbboneless skinless chicken breasts
or thighs, cut into bite-size pieces
2 Tbspbutter
1 Tbspolive oil
1 tspgarlic powder
1 tspitalian seasoning
½ tsppaprika
1 tspsalt
½ tspblack pepper
12 ozpenne pasta
3 Tbspbutter
3cloves garlic
minced
1 ½ cupsheavy cream
or half-and-half
1 cupchicken broth
1 cupshredded mozzarella cheese
1 cupgrated parmesan cheese
fresh parsley
chopped, optional

Instructions
Step 1
Bring a large pot of salted water to a boil. Cook penne according to package directions. Drain and set aside.
Step 2
Heat 2 tbsp butter and olive oil in a large skillet over medium heat.
Step 3
Add chicken and season with garlic powder, Italian seasoning, paprika, salt, and pepper. Cook 6-8 minutes until browned and fully cooked. Remove and set aside.
Step 4
In the same skillet, melt 3 tbsp butter. Add minced garlic and cook 1 minute until fragrant.
Step 5
Pour in heavy cream and chicken broth. Stir and bring to a gentle simmer.
Step 6
Add mozzarella and Parmesan cheese. Stir until melted and smooth.
Step 7
Add cooked penne and toss until fully coated. Return chicken to skillet and mix gently.
Step 8
Garnish with parsley and extra Parmesan if desired. Serve warm.
