Syrniki (Cottage Cheese Pancakes)
Yield: 11–12 pieces
Ingredients
- 250 g cottage cheese
- 1 egg
- 1 tbsp sugar (level)
- 5 g vanilla sugar (half pack)
- 2–2.5 tbsp flour (add gradually)
- 1/2 tsp baking powder (half pack)
- 1 tbsp flour (for shaping)
- Vegetable oil (for frying)
Instructions
1. Mix cottage cheese, egg, sugar, and vanilla sugar.
2. Add flour one tablespoon at a time, mixing well. Add baking powder with the first tablespoon.
3. Mix until smooth.
4. Roll into balls, coat lightly in flour, flatten into thick patties.
5. Heat pan on high, add oil, reduce to medium heat.
6. Fry covered until golden, flip and cook the other side.
