Instructions
Step 1
Preheat the oven to 180ºC.
Step 2
In a pan, heat the olive oil over medium heat. Add the red onion and sauté for 5 minutes until softened.
Step 3
In a large bowl, combine the cooked quinoa, chickpeas, crumbled feta, sautéed onion, oregano, salt, and black pepper.
Step 4
Stuff each pepper halves with the quinoa mixture, pressing down gently to pack them.
Step 5
Place the stuffed peppers in a baking dish and cover with foil.
Step 6
Arrange the baking dish in the preheated oven and bake for 30 minutes, or until the peppers are tender.
Step 7
Serve hot, garnished with fresh parsley.
